Couscous recipe.

Healthy, low fat, low calories and good value for money!

Ingredients

  • 100g of plain couscous (90 kcal)
  • Water
  • 1 or 2 vegetable stock cubes, to taste (7 each)
  • Roasted veg of choice; courgettes, aubergines, peppers are great choices! (40kcal approx)

Method

  1. Crush the stock cube/s into the couscous, mix together with a fork.
  2. Add boiling water to couscous, enough to cover it. Leave it a moment to soak in, add more water or couscous if necessary.
  3. Add roasted vegetables and mix in.
  4. Add salt and pepper to taste. Grate cheese on top if you wish!
