Couscous recipe.
Healthy, low fat, low calories and good value for money!
Ingredients
- 100g of plain couscous (90 kcal)
- Water
- 1 or 2 vegetable stock cubes, to taste (7 each)
- Roasted veg of choice; courgettes, aubergines, peppers are great choices! (40kcal approx)
Method
- Crush the stock cube/s into the couscous, mix together with a fork.
- Add boiling water to couscous, enough to cover it. Leave it a moment to soak in, add more water or couscous if necessary.
- Add roasted vegetables and mix in.
- Add salt and pepper to taste. Grate cheese on top if you wish!
